Twin Anchors Restaurant

If you are looking for some old school barbecue food from a landmark place that has been around since 1932, then the Twin Anchors BBQ restaurant is your kind of place.

Everything about Twin Anchors smells old school.  The place is located in old town Chicago.  It’s a family run restaurant that has an old school music selection and good old fashion beers.  But what has kept this place around is their killer BBQ ribs.  It’s the type that falls right off the bone so you know you are eating at the right place as soon as the ribs arrive at your table.  Their side orders are really good.  My personal favorite are the onion rings.

If you manage to still be hungry after eating all your BBQ food, check out their cheese cakes.

Carson’s Chicago BBQ

Known as a Chicago institution for BBQ Ribs and BBQ food, Carson’s is the place for bbq ribs.  Located at 612 North Wells Street, in Chicago, this institution has been turning out some of Chicago’s best BBQ foods.

Mainly know for their sweet and tangy barbecue sauce, just about everything on the menu is good.  Don’t let the look of the restaurant deter you.  This is one fine BBQ restaurant.  If you come here during the day time, there is a good chance you won’t have to wait too long for a table.  Those coming here for dinner can beat that there will be a wait.  The restaurant has a bar and a decent beer list to ease the wait.

My personal favorites are the baby back BBQ ribs and the BBQ beef sandwich.  The sides are delicious and the bread helps to fill your already stuff stomach.

Barbeque History

The word “Barbeque” (aka BBQ) originally referred to the roasting of a whole hog, ox, or any type of large animal on a crude gridiron of stakes.  The stakes were placed over hickory wood fires in an open field.  Whole animals were spitted from barbe to queue or from whiskers to tail.

The term barbecue comes from these French words.  French hunters have been credited with introducing this method of cooking in America and areas like in Chicago.

BBQ now refers to any meat basted with or served in a barbecue sauce.  The meat may be roasted slowly on a revolving spit, on a gridiron, over coals, under a full flame, or in an electric oven.  Each Chicago BBQ joint is going to have their method of cooking their signature dish.

When charcoal grilling is done outdoors, steaks, chops, spareribs, chickens, hot dogs, hamburgers, or fish are cooked four to five inches above a bed of glowing coals.  Before cooking most Chicago BBQ masters will soak the meat in a marinade mixture of vinegar, onion, garlic, salt, and spices for several hours.  It is basted frequently with a sharp BBQ sauce while being cooked.  The sauce usually consists of catsup or chili sauce that has been added to the marinade.  The exact ingredients that make up any great bbq sauce is always subject to debate because no good bbq sauce maker reveals their secrets to the general public.
